These muffins are such a good way to start the day. I have been making them for 27 years. My mother in law Helen shared the recipe with me. I have tried other applesauce muffin recipes but have never found one as good as Helen's recipe. I did change the amount of spices but that is just because I love the taste of cinnamon so much.
It doesn't matter what kind of applesauce you use. If sweetened applesauce is your "thing" you can use that or if you like unsweetened or cinnamon flavored any of these will work with this recipe. That way you don't have to send your husband to the grocery store to pick up applesauce for you. Once again, I have most of the ingredients in my pantry and spice drawer. Did I mention that these only take about 5 minutes to stir up?
Your first step is to add all the dry ingredients to a mixing bowl. This includes the sugar, flour, salt, soda, baking powder and the spices. I used my mixer so I could get some good pictures. You could also mix these wonderful muffins by hand in a bowl.
In another bowl I added the wet ingredients together and gave them a quick mix.
Wow, that looks like a mess. But the applesauce, oil and egg are what makes the muffins so tasty that you won't be able to stop at just one. Now that you have one bowl with the dry ingredients and another with the wet ingredients we will combine them. Meaning add the wet ones to your bowl with the dry ingredients. Mix until just combined. Never over mix.
You are ready to put the muffin liners in the muffin tins. Or if you are like me and often run out you could also just spray the muffin tins. I was able to get 12 muffins out of this recipe and I believe you should also get 12 muffins. Fill the muffin tins about 2/3 way full to make sure they don't overflow in the pan.
Bake at 350° for 12-15 minutes. I like to serve these warm. I wonder if anyone has made an applesauce muffin candle. That's just how amazing these muffins taste. I think Helen would be smiling and saying..."oh my" if she knew I mentioned her muffins in the blog.
Ingredients:
½ cup oil
½ cup applesauce
1 egg
1 cup sugar
1½ cups flour
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon allspice
½ teaspoon cloves
¼ teaspoon nutmeg
Directions:
Preheat oven to 350° Bake for 12-15 minutes
Mix the sugar, flour, salt, baking soda, baking powder, cinnamon, allspice, cloves and nutmeg together in your mixing bowl.
Combine the oil, applesauce and egg together in another bowl.
Add the wet mixture to your mixing bowl with the dry ingredients.
Mix together until combined. It is important not to overmix the batter.
Either spray your muffin tins or use muffins liners to prevent the batter from sticking to the pan.
Fill 2/3 full and bake for 12-15 minutes.
