Blueberry Cobbler

Is it just me or does this nice weather make you feel like making Blueberry Cobbler? This picture just looks like summer!

This is such an easy recipe with so few ingredients and you could really use blackberries, strawberries or even canned peaches for this cobbler.

Let's get started! Here is a list of the ingredients I used when making this delicious Blueberry Cobbler.

  • Butter (melted)

  • Self rising flour

  • Sugar

  • Buttermilk or 2% milk

  • Blueberries-fresh or frozen

  • Vanilla

That's it! A total of six ingredients. To start all you need to do is melt the butter and pour it into an 8 x 8 square baking pan. If you don't have a square pan you could use a round pan or even a small rectangular one.

Please don't look at the scratches on my pan. This pan has been used a lot! No need to spray the pan with cooking spray. So far it's easy peasy, right?

Next go ahead and mix together the flour and 1 cup of the sugar in a small bowl. Making sure to reserve the extra ½ cup of sugar for the berries. You can also add the buttermilk and vanilla to the dry mixture.

Once the dry ingredients and the wet ingredients are in a bowl go ahead and mix them together until just combined. Yes, it is a bit clumpy. But no worries as that is how it is suppose to look.





Once the ingredients are combined you are going to pour the mixture into your baking pan with the butter.

You see lots of little air bubbles but that is not a problem at all. Then just let it be. I know you want to stir it! But don't stir anything....just take a breath!



Wash the blueberries. Then go ahead and place them in a small bowl and add the remaining sugar and the remaining melted butter to that bowl and mix together. Oh, how I love blueberries!

Next spoon the blueberries on the top of your batter in the baking pan. Once again, no stirring allowed!

Place the Blueberry Cobbler into your oven that is set at 350° and bake for 40-45 minutes until a toothpick inserted in the Blueberry Cobbler comes out clean. It's not the most beautiful looking finished product but just wait to taste this Blueberry Cobbler! Let the Blueberry Cobbler cool to room temperature.

Finish your Blueberry Cobbler with whipped cream or a scoop of vanilla ice cream.

Blueberry Cobbler


Level: Easy

Prep Time: 15 minutes

Bake Temp and time: 350° for 40-45 minutes.


Ingredients

  • ½ cup plus 2 tablespoons of melted butter

  • 1 cup flour

  • 1½ cups sugar separated

  • 1 cup buttermilk

  • 2½ cups blueberries fresh or frozen

  • 1 teaspoon vanilla


Instructions

  1. Pre-heat oven to 350°.

  2. Melt ½ cup of butter and pour into an 8x8 baking pan.

  3. In a medium bowl mix together the flour, sugar, buttermilk and vanilla combine until just mixed. Do not over mix. Pour on top of the butter mixture in your baking pan (do not mix together-see picture above).

  4. Wash the blueberries and drain any excess water from the berries. Put in a small bowl and add the ½ cup of remaining sugar and the remaining 2 tablespoons of melted butter. Stir gently to combine.

  5. Spoon the blueberries on the top of the mixture in your baking pan.

  6. Bake at 350° for 40-45 minutes-until a toothpick inserted comes out clean.

Serve with a dollop of whip cream or a scoop of vanilla ice cream.


Missy's Tips


  1. Use any type of berry, peaches or apples for this cobbler.

  2. Use can use 2% milk instead of buttermilk for this recipe.

  3. Keep covered and store in a cool place.

  4. Enjoy!
