Mini Meatloaf is so very good. No ketchup in this recipe. Only barbeque sauce belongs in these Mini Meatloaves. Don't get me wrong, I don't mind ketchup, just not in my meatloaf. Plus the BBQ sauce when combined with just a little brown sugar gives these Mini Meatloaves such a great taste that you will be lover too.

So the BBQ sauce I use is Sweet Baby Ray's BBQ Sauce. That's right, it's gluten free. The spice dish includes; salt, pepper and garlic powder. I use Trader Joe's Oatmeal to make this a gluten free recipe. But, you can use any brand you wish to use. Just do not use steel cut oats. I also pulse my oatmeal in the food processor just because I like too.
Start by add your ground beef to a large bowl.
Crack the egg and then give it a little whisk.
Add the egg to your ground beef. (Not a great picture)
Add the oatmeal, onions, cheese, milk and salt, pepper and garlic to the same dish. Combine with your hands or a spatula.
So, now that everything is combined, you need to form the ground beef mixture into Mini Meatloaves. I use almost ½ cup of ground beef to make each Mini Meatloaf. The important thing about Mini Meatloaves is to make them all the same size. They don't have to be perfect in shape. But, the most important thing about Mini Meatloaves is that they are all the same size (Sounds a bit like a book I used to read to our kids; Margaret Wise Brown)
I made enough so we had leftovers and could share some with our dads.
Bake at 350° for 30 minutes.
While the Mini Meatloaves are in the oven go ahead and mix the BBQ sauce and brown sugar together. When you take the Mini Meatloaves out of the oven after 30 minutes you can use a spoon or brush and apply your BBQ mixture to the top of each one.
Return the Mini Meatloaves to the oven for 5 more minutes. When you remove them from the oven use a meat thermometer to make sure they are cooked to 165° internally. If you don't have a meat thermometer you can just cut one open and make sure the beef is cooked through. If you are like me you can let them sit a few minutes while you mash your potatoes. Because meatloaf and mashed potatoes go together like pork chops and applesauce.
Mini Meatloaf Recipe
Prep time: 10 minutes
Oven Temperature: 350°
Bake time: 35 minutes
Ingredients
1½ pounds ground beef
1 egg
½ cup oatmeal
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
½ cup chopped onion
¾ cup milk
1 cup shredded cheddar cheese
¾ cup BBQ Sauce
1 tablespoon brown sugar
Directions
Preheat oven to 350°
In a large bowl combine ground beef with a whisked egg.
Add the oatmeal, salt, pepper, garlic powder, onion, milk and cheese to the same bowl.
Use your hands or a spoon to combine.
Shape into Mini Meatloaves. I use about ½ cup of the meat mixture for each loaf.
Bake for 30 minutes.
While the Mini Meatloaves are baking you can mix together the BBQ sauce and brown sugar.
Remove the Mini Meatloaves from the oven after 30 minutes and use a spoon or brush to top each one with the BBQ mixture. Return to the oven for 5 minutes.
Use a meat thermometer, the internal temperature of the Mini Meatloaves should be 165°. If you don't have a meat thermometer then go ahead and cut a loaf open to make they are cooked through.

You can use ketchup instead of BBQ sauce.
Check your BBQ sauce to make sure it is gluten free if you are planning on the recipe being gluten free.
Serve with mashed potatoes!
