Oatmeal Raisin Cookies

Might I say that these are my husband’s favorite cookies. I mean I love them and especially with a glass of milk, but my husband likes these better than their cousin with chocolate chips.

All these ingredients you may have on hand but if not, they are easily found at the grocery store.



Make sure your butter is at room temperature when you start. You will add the sugar to the butter and mix in your bowl until thoroughly combined.



Add the eggs to the mixture and keep on mixing. It is important you do not overmix your cookie dough.

Once combined add the rest of the dry ingredients.

You will use a cookie scoop to put the cookies on the pan. I can fit 12 on a pan but make sure to leave at least an inch if not more between cookies.


Voila! These are such great cookies! The smell of cinnamon fills the air as I type this recipe! I hope you enjoy these cookies as much as we do. If you need more than the original recipe calls for you can always double the recipe so you have twice as many to enjoy!





Recipe:

⦁ ¾ cup sugar

⦁ ¼ cup brown sugar

⦁ ½ cup butter

⦁ 1 teaspoon vanilla

⦁ 1 egg

⦁ ¾ cup flour

½ teaspoon baking soda

⦁ ¾ tsp. cinnamon

⦁ Pinch of salt

⦁ 1 ½ cups quick cooking oats

⦁ ¾ cup raisins

⦁ ½ cup chopped walnuts or pecans (optional)


Instructions:

⦁ Combine the sugar, brown sugar and butter together until thoroughly mixed.

⦁ Add in the vanilla and the egg, mix together.

⦁ Add the dry ingredients in until the dough is mixed well. Do not over mix.

⦁ Bake at 375° for 8-10 minutes. Let the cookies cool and then remove them from the cookie sheet to a wire rack.
